• 1 lb of fresh asparagus
  • 1 tsp white wine vinegar
  • 1.5 tsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp coarsely ground black pepper
  • 1 hard boiled egg, grated
  • 1/4 ib prosciutto, shaved
  • 1/4 cup shredded fresh parmesan
  • 1 tsp chives, chopped
  • Trim asparagus and boil in salted water 1-2 minutes or until crisp tender. Drain, plunge into ice water and drain again. Toss with vinegar, olive oil, salt, and pepper. Place on a serving platter and top with grated egg, prosciutto, parmesan and chives. Enjoy! Yumm!

Spring time means fresh vegetables, fruit and a lighter menu!  I love this time of the year and I am always thinking of new ways to use the fresh produce….no need to eat heavy foods when you have all of this readily available!  This is a fun way to serve asparagus and get a little protein too!  I hope you enjoy!
