• 1 cup sugar
  • 2 Tbsp cornstarch
  • 1/2 tsp salt
  • 2 Tbsp flour
  • 3 cups of milk
  • 4 egg yolks
  • 1 Tbsp vanilla
  • 1/2 stick of butter
  • 4 medium bananas, sliced
  • 1 (12-ounce box) of vanilla wafers, I use Keebler
  • For the Meringue:
  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/4 cup sugar
  • Mix together sugar, cornstarch, flour, and salt. Slowly add milk and cook at low heat until thickened. Slightly beat egg yolks and add small amount of pudding mixture until tempered. Add egg mixture back to pudding mixture and continue cooking two minutes. Remove from heat and add vanilla and butter. Mix well. Let cool. Layer in 9X9 bowl. Start with pudding, layer bananas, wafers, pudding, etc. - three layers and end up with pudding and top with meringue. Bake in oven at 350 until meringue is toasted. Enjoy with a big glass of milk!

There is no better comfort food than old fashioned banana pudding.  It is a request in our household, but not honored as it should be.  I decided the other night when I looked at all of the bananas we had, it was time…… I hope you enjoy this as much as we did!
