• 1 lb of pizza dough
  • 1 tsp plus 1 Tbsp olive oil, divided
  • 5 Tbsp of fig preserves (I use Bonne Maman)
  • 1 yellow onion, sliced
  • 1 tsp sugar
  • 4 ounces of fresh figs, sliced
  • 1/4 lb of thinly sliced prosciutto
  • 1/2 cup crumbled goat cheese
  • 4-8 ounces of fresh mozzarella, sliced
  • fresh basil leaves
  • In a small nonstick skillet, heat 1 tsp olive oil and saute onion, stirring occasionally, about ten minutes until golden brown. Add 1 tsp sugar and continue cooking until caramel color. Set aside to cool.
  • Preheat oven to 450 degrees. On pizza crust, spread remaining olive oil and cover with fig preserves. Arrange cooled onions, sliced figs, prosciutto, goat cheese, and sliced fresh mozzarella. Bake 10 minutes, then place fresh basil leaves on top and cook until cheese is bubbly.

So for the 4th of July, I decided I wanted to enjoy the wonderful fresh figs that are in season now.  I absolutely LOVE the combination of the caramelized onions, with the fresh figs, prosciutto, and goat cheese.  It made my mouth water just putting this together!  You can make your own pizza dough or buy it fresh from Whole Foods or your grocery store.  We enjoyed this delicious pizza as we celebrated our nation’s birthday!!  Happy 4th of July! :)
